Raspberries and blueberries are in season. The raspberries in my yard have abundant berries. They are so good with ice cream! They are also good with a Finnish oven pancake (Pannukakku). Here is a recipe for this slightly sweetened pancake.
Ingredients:
- 4 eggs
- 1/3 cup sugar
- 2/3 cup flour
- ¼ tsp. salt
- ¼ cup butter (1/2 stick)
- 2 cups milk (dairy or almond or coconut)
Preheat oven to 400°. Beat eggs in a large mixing bowl. Add sugar, flour, salt and beat well. Add butter to 9 x 13 inch baking dish (or pan). Place baking dish in the oven for about a minute to just melt the butter. Tilt the pan so that butter covers bottom and partially the sides. Add the milk to egg mixture and beat until smooth. Pour batter into hot pan. Place in 400° oven and then turn oven heat down to 375°. Bake for 30 minutes.
Serve with fresh berries.
