Herbs in the Garden for Summer and Winter

During the summer it is wonderful to have fresh herbs from the garden. They are easy to grow! Stone Cottage Adventures has good information for growing herbs. I have perennial thyme and sage. Rosemary, basil, marjoram and oregano grow in pots. The herbs add flavor and nutrients to food.

These herbs can be dried for use in the winter.  I make my own dried herb blend.After picking an assortment of herbs, I pace them on a paper towel on a rack. 

Then I place a dome over the herbs and drape a linen napkin over it. It takes about two weeks for the herbs to dry. (Sage may take a little longer.)

An alternate way to dry them is in the oven. Place the herbs on a glass baking dish. Turn the oven on to warm and place the herbs in the oven. After five minutes turn the oven off and leave the herbs in the oven for 24 hours.

After the herbs are dried, they can be ground in a coffee grinder. I have a second coffee grinder that is dedicated to herbs only.  I place the ground herbs in a jar, adding to it throughout the summer. They are ready to add to meat, poultry and soups.

I don’t include basil in the herb mix. Basil leaves can be frozen in olive oil, in an ice cube tray.
